Red velvet actually became popular in the Victorian Era, when it was served to the elite and on special occasions. So where does the red coloring come from? Part of it comes from the cocoa reacting with the vinegar but most of it comes from red food coloring. Without the food coloring, red velvet would have a lighter color, not the bright red we’ve associated it with.
